Last week there was something on TV about cooking cakes using vegetables such as courgettes, making cakes much more healthy. I have tried to find out who the cook was. I think she has a book out. Anyone have info please.

can't help with the particular programme but there's a great courgette and chocolate cake recipe in the cakes thread I think

I saw that on the Breakfast programme last week. Was it this one? Was a bit confused by the author being called Harry but it turns out she's a laydee .

I once made chocolate muffins with beetroot in them. They were fab, but it's not advisable to eat four in one go .

I make muffins all the time using whatever root veg (or squash) I have that needs using up

use the pumpkin muffins recipe on the riverenene website

Choc and beetroot is in the food thread too, it's our fave and a very good stress reliever as well as delish.

Grated courgette can be dropped into any cakes, but then, my kids eat green veg as a matter of course and would not turn a hair at being presented with green bits in a lemon butterfly cake. Likewise carrot,which would look good with orange icing and perhaps orange flavoured cakes.

Sweet potato? Cooked, mashed, could be added to cakes (but a lot less sugar as well)

Any of the squashes as well.

Also, my twins suggest fresh peas, since they're so sweet. The sweet potato was Twin A's suggestion, too.

Pod, spot on, can't forget a name like that.
When I tried to google vegetable cake all I got was other recipes, but that particular author/cook sounds spot on.
