I have just read elsewhere of somebody who oven dries their toms, & then just puts them in the freezer instead of putting them in oil & jars, not tried it myself yet but think this is the route I will go down...

ooooh, but then you'd miss out on all that lovely tomatoey (is that a word?!) olive oil which you can also add to cooking even if you don't particularly want the tomatoes themselves in that dish.

I have 5 lovely oil and dried tom filled jars - the oil is already turning red - nom nom nom
